What is Focaccia Bread?

Focaccia bread is a flat oven-baked yeast bread that originates from Italy and is pronounced “fuh-KA-cha.” It is traditionally topped with fresh herbs, such as rosemary, and coarse salt, but it is a very versatile bread that can be changed to your liking. I’ve even seen it with raisins in and topped with sugar or honey to make a sweet dessert bread. Mums!

Here is your shopping list if you want to make this amazing bread! In fact, you probably have many of these already at hand, so your shopping list will be short:

  • Flour bread (or all purposes)
  • Kosher salt
  • Water
  • Instant yeast
  • Sugar
  • Olive oil
  • Garlic
  • Parmesan cheese
  • Italian spice
  • Maldon Flake Sea Salt

How to Make Garlic Parmesan Focaccia Bread Recipe

This is going to follow the same steps as your typical yeast bread, but it’s so easy and forgiving. Let’s go through the steps:

  1. Mix flour and salt in a glass bowl.

  2. Mix the hot water, yeast and sugar and let it soak for a few minutes so that the yeast becomes frothy.

  3. Stir the yeast mixture into the flour with a wooden spoon. You will want to stir until the dough just comes together. Then leave it in the fridge for 8 hours in a bowl covered tightly in plastic wrap.

  4. A few hours before eating the focaccia, take the bowl out of the fridge and prepare an 8-inch round cake tin by dripping it with olive oil.
  5. Place the dough in the center of the pan and place the ends underneath, then cover them tightly with plastic wrap again and let it rise on the table for 2 hours.
  6. Preheat the oven to 450ºF. Remove the plastic from the pan and drizzle with more olive oil. Press holes in the dough down to the bottom of the pan, but do not pierce the dough.
  7. Mix garlic, cheese and herbs in a bowl and then sprinkle it all over the dough.
  8. Put the pan in the oven and lower the oven to 425ºF and bake for 22-24 minutes.

Why Dimple Focaccia Dough?

A signature focaccia bread is the indentation on top, but is there a purpose or is it purely cosmetic? There are different opinions out there, but the reason that makes the most sense to me is that it increases the surface area and creates small pockets where the olive oil can accumulate in. This improves the taste and crust of the bread.

Can you freeze garlic Parmesan Focaccia bread?

Absolutely!

Wrap the baked bread in plastic wrap and then store it in a zip-top bag or use a FoodSaver. It stays in the freezer up to 3 months. Thaw it on the kitchen table to room temperature before serving. It can also be heated in the oven. I love it hot!

How long does focaccia bread last?

Focaccia Bread will keep at room temperature, covered with plastic wrap, until 2-4 days.

However, I’m not sure if it lasts that long. Our kids CONSUME this right away when I do! 😉

  • 2 Copper Flour Bread or all purposes
  • 1 teaspoonful Kosher salt
  • 1 Cup Water warm
  • 1 1/8 teaspoonful Yeast instant
  • 1/2 teaspoonful Melis
  • Olive oil
  • 3 Carnation Garlic chopped
  • 2/3 Cup Parmesan cheese fresh, torn
  • 1 1/2 teaspoons Italian spice dry
  • Maldon Flake Sea Salt
  • Add flour and salt in a glass bowl. Mix to combine.

  • Mix the hot water, yeast and sugar in a glass measuring cup. Let it stand for a minute (see note) and stir it into the flour with a wooden spoon until the dough just just gathers.

  • Cover the bowl with a tight plastic wrap and place it in the fridge for 8 hours or until overnight.

  • Take the bowl out of the fridge.

  • In an 8-inch round cake tin, drizzle oil and place the dough in the center, placing the ends underneath.

  • Cover with plastic wrap and leave to rise for 2 hours.

  • Preheat the oven to 450ºF.

  • Once the dough has risen, it should fill the pan. Drizzle with extra oil and use your fingers to press holes into the bottom of the pan, but not through the dough.

  • Mix garlic, cheese and herbs in a bowl

  • Sprinkle with garlic, cheese and herbal mixture and salt.

  • Put in the oven and turn down to 425ºF and bake for 22-24 minutes or until golden.

  • Activated yeast should bubble and foam up within a few minutes if your yeast is good.

This bread keeps at room temperature for 4-5 days.
