We love garlic butter on everything from roast chicken to this easy fish recipe.

FISH: Fresh or frozen cod is easy to find and affordable. We love the cod loins in this recipe because they are a little thicker, but the cod fillets are also excellent.

Other white fish to use are tilapia, haddock, hake or sea bass.

SEASONINGS: We prefer the melted olive oil butter in this recipe for its flavor. Garlic adds a savory flavor to baked cod, and lemon pepper gives it a lively flavor with lemon juice.

Use fresh lemon juiceyou will also need a lemon for the slices, so a whole lemon should suffice!

Use a little lemon zest to make homemade lemon pepper if you like! We prefer the homemade one because I find the commercial lemon pepper a little too salty!

This baked cod recipe is simple to make.

Tender, flaky and infused with lemon garlic butter, this baked cod is bursting with flavor in every bite!

  • Preheat the oven to 400°F.

  • Slice half the lemon. Squeeze the other half, you will need 1 tablespoon of lemon juice. Arrange the lemon slices in a gratin dish.

  • Whisk together butter, garlic and 1 tbsp lemon juice.

  • Dry the cod fillets or loins with a paper towel. Sprinkle the cod with lemon pepper and dill and place it on the lemon slices.

  • Pour the garlic butter mixture over the cod. Bake for 15 to 20 minutes or until opaque and fish flakes easily. Do not overcook.

  • Sprinkle parsley on top and drizzle butter over it to serve.

Store-bought lemon pepper is usually quite salty, so I don’t find it necessary to add much. salt this recipe. Taste the lemon pepper and if it is not salty, a little extra salt can be added to the recipe.
