Our garlic butter chicken is a super easy hob chicken recipe consisting of tender, juicy chicken assassins topped with a garlic butter sauce ready in just 10 minutes!
This chicken is so rich and buttery and the whole recipe can be made in a frying pan which is always a win! A quick meal with an easy cleanup is what I need every day!
You all know we love having our kids in the kitchen, and this is my oldest favorite chicken recipe. It’s one of her great recipes when it’s her turn to make dinner.
Do you all cook with your children? I know it’s more work, more clutter and more stress … at least in the beginning. But I swear it will change your life, your relationship, and in the process you will create capable and self-sufficient children. Not to mention the memories you will share forever.
Now I see in my mind that Peyton is making this recipe in college and for his own family one day. It’s just pure joy for me! I’m going on a siding, but cook with your kids, folks! You will never regret it!
Ok, back to this chicken … it does not require many ingredients to make this one easy chicken recipe. Most of these will be items you already have on hand. Here is your ingredient list:
- Chicken tenderloin – cook fast, white meat that looks like chicken breast but smaller
- Smoked peppers – you can use regular peppers instead, but we just love the smoky taste of the smoked peppers
- Poultry Spice – Montreal Chicken Spice is a great option
- Butter – adds so much richness and is the base of the sauce
- Garlic – pack all the flavor, use fresh and chop it
- Italian spice mix – you can buy an Italian spice mix or make your own, it is typically made from a mix of oregano, basil, thyme and rosemary (and sometimes marjoram)
- Cooking white wine – you can definitely use regular white wine (use a dry wine) or chicken broth if you do not want to use alcohol
- Salt and pepper – taste
- Lemon juice – fresh is of course best
- Parsley – fresh, finely chopped

Here are a few tips to make this recipe:
- Use a cast iron skillet. If you do not have one, an ordinary frying pan will do the job, but a cast iron pot stings just as beautifully!
- Season the chicken tenderloin with smoked paprika, poultry season and S&P before cooking and let it rest.
- Let the chicken have one good sweat on it. Do not mess with it, let it become golden and delicious!
- Glass! Whether you use wine or broth, glazing the pan after cooking the chicken gives all the flavor and is crucial to the success of this dish.
- Beat the chicken with a little salt and lemon juice to finally light up the dish and add a whole new layer of flavor.

We love to serve this garlic butter chicken over a rice bed or on top of a pile of mashed potatoes. It’s also a great protein to add to a salad … my favorite lunch these days!
Add a side of roasted vegetables or some asparagus and you have yourself a healthy quick meal!
Can I use chicken breast or thighs?
You can definitely use thighs or breasts. Your cooking time will be longer so it will not be as fast, but the taste will still be great.
If you go with thighs (use 3-4), you will want to saute the chicken on the first side for about 5-7 minutes and then turn and fry for another 4-5.
If you go with breasts (use 2-3), knock them out so they are an even thickness, then sear on the first side for 6-8 minutes and then on the second side for another 4-5.
What if I do not have a cast iron pan?
It is okay! You should buy a cast iron bucket, but that’s ok. The best replacements for a cast iron pan are a stainless steel frying pan or a Dutch oven. You want a pan that can get super hot and conducts heat well.
Can I make this recipe milk free?
Yes, but butter, oh butter … it’s so good! If you need to replace it for dietary reasons, you can replace it 1: 1 with olive oil or ghee.

- 6 Chicken offerings
- 1 1/4 teaspoons smoked paprika
- 1/2 teaspoonful Poultry seasoning Montreal chicken works well
- 4 Tableware Butter
- 6 Carnation Garlic chopped
- 1 teaspoonful Italian spice blend
- 1/2 Cup Cooking white wine chicken broth or actual white wine
- Salt and pepper
- 1 1/2 teaspoons Lemon juice
- Parsley fresh, chopped for garnish

Season the chicken tenderloin with smoked paprika, poultry seasoning, salt and pepper. Set aside.

Heat a cast iron skillet over medium-high heat and add a good drizzle of olive oil. Add the chicken tenderloin. Cook for 1-2 minutes or until browning, then turn and start frying the other side, about 2 minutes more. Push the chicken kills to the side of the pan, away from the high heat.

Add the boiling white wine and use a wooden spoon to scrape up any pieces and glaze the pan.

Add the butter followed by garlic and Italian spices on top of the chicken kills and stir until well blended.

If necessary, add salt and lemon juice and continue to cook the chickens tender until lightly charred on both sides and well done.

Add the chopped parsley, stirring well. Turn off the heat and serve with an extra splash of lemon.
